The Sur del Lago de Maracaibo region in Venezuela

Story

Sur del Lago is translated as “south of the lake” and refers to the territory located south of the Maracaibo basin, which spans municipalities from the states of Zulia and Mérida. The beans are collected, processed and exported by a cacao growing family who has been in the business for generations. They support the farmers they work with by providing new planting materials, trainings and rehabilitating their plantations. By improving their production, these farmers get better prices for their cacao and can now access new markets.

Post Harvesting Process

The wet mass is collected by truck and brought to a central fermentary. Fermentation takes place in wooden boxes for an average of 5 to 6 days depending on the batch and the local weather conditions. After fermentation, the beans are dried on wooden tables.
