La ventilación es fundamental para mantener el cacao en buen estado y evitar la formación de moho. Asegúrate de que la habitación donde vas a almacenar el cacao tenga suficiente ventilación para que circule el aire. Temperatura ideal: inferior a 16 grados centígrados. Humedad relativa ideal: 75-85%.
Para evitar cualquier posible contaminación de tu área de producción, almacena el cacao por separado para evitar la posibilidad de que una polilla extraviada ponga huevos en su tu chocolate.
