Story
Chuno® is a fine cocoa single variety cultivated and harvested by approximately 1000 cocoa producers families. To be able to work with even the smallest of producers, Ingemann offers the benefit of collection at farm-gate. A truck drives biweekly to the plantations to collect the cocoa in wet-mass so the producer doesn’t have to deal with the risk and the cost of post-harvest. This way, they can focus on managing their plantation.
All Chuno cacao producers are part of the Adapta Project. This 4-year project, driven by Ingemann, is to create climatic resilience in the fine cacao and honey sectors.

Post Harvesting Process
Fermentation takes place in wooden boxes. Different protocols have been developed to bring out the best and most interesting flavours in the beans. The cocoa is sun dried on wooden tables.
